2 Holiday Recipes to Take To Your Family Gatherings

Don't let the holidays pass your family gatherings by without bringing these delicious treats along with you! They're easy to make in your new or used RV and are total crowd pleasers.

Quick & Easy Holiday Sausage Balls

Ingredients:

  • 1 lb ground sweet Italian sausage (want some extra heat? Go with spicy!)
  • 1 box Red Lobster brand cheddar biscuit mix
  • 1 egg
  • 1 cup shredded cheese (shredded cheddar, Monterey jack, or pepperjack)

You'll also need:

  • Mixing bowl and spoon
  • Cookie sheet
  • Parchment paper
  • Meat thermometer

It doesn't get easier than this! Here's how to make them:

  • Line a cookie sheet with parchment paper.
  • Mix everything together - yep, even the little seasoning packet in the biscuit mix.
  • Scoop out large tablespoon size portions onto the cookie sheet, rolling each into a ball.
  • Bake at 350 degrees until the meat thermometer reads 160 degrees - about 12-15 minutes. Store uneaten leftover sausage balls for up to 3 days in a food storage container in the fridge.

Why a meat thermometer instead of a timer? This insures the sausage balls cook thoroughly without drying out! You certainly don't want undercooked sausage balls (yuck), but overcooked sausage balls get dry and lose their flavor. Cook to temperature instead of time and you'll never go back!

Smooth & Creamy Mint Cocoa

One of my family's absolute favorite recipes is for homemade hot cocoa! This is like drinking a warm, comforting chocolate soup. And all you need is a slow cooker or a soup pot!

Ingredients:

  • 1 1/2 cups heavy cream
  • 1 14-ounce can sweetened condensed milk
  • 2 cups milk chocolate chips
  • 6 cups of milk
  • 1 teaspoon peppermint extract
  • Garnish (optional) - your choice of the following:
    • Aerosol whipped cream
    • Chopped Andes candies
    • Peppermint sticks

You'll also need:

  • 3 quart sauce pot or Crock Pot
  • Slow cooker liners (if using Crock Pot)
  • Stirring spoon or whisk
  • Ladle

How to:

  • Place the slow cooker liner in your Crock Pot, if you're using it. It helps make cleanup a snap!
  • Place all ingredients (except garnishes) into the slow cooker and heat on low until the chocolate chips are melted and the entire mixture is heated through and smooth.
  • If you use your cooktop instead, combine all ingredients (except garnishes) into soup pot and heat over medium-low until the chocolate chips are melted and the entire mixture is heated through and smooth, stirring and whisking constantly. Do not boil.  
  • Ladle into cups and garnish beautifully!

If you make this recipe for homemade hot cocoa over the stovetop, be patient with the process. If you heat it at a higher temperature, the milk can easily scorch and burn on the bottom of the pan.
