Pumpkin Spice French Toast

  • 6 eggs
  • 1 cup milk
  • ¼ cup brown sugar
  • 2 tsp pumpkin pie spice
  • ½ tsp salt
  • 1 ½ tsp vanilla
  • ½ cup canned pumpkin
  • 1 loaf (12-16 slices) of sourdough bread
  • Maple syrup, butter, and chopped pecans

You’ll also need:

  • Medium bowl
  • Whisk
  • Measuring cups/spoons
  • Griddle
  • Spatula
  • Nonstick spray

Let’s get going!

  • Turn on flat top griddle to medium heat and coat with nonstick spray.
  • Whisk together in a bowl until smooth: eggs, milk, brown sugar, pumpkin pie spice, salt, vanilla, and pumpkin.
  • Dunk bread into egg mixture quickly to coat on both sides and place on griddle. Cook for 3-4 minutes per side until brown. Remove from heat and top with butter, sprinkle with pecans, and drizzle with maple syrup.

  • 1 cup canned pumpkin
  • 1 egg
  • 2 Tbs vegetable oil
  • 2 Tbs vinegar
  • 2 cups all purpose flour
  • 3 Tbs brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 heaping tsp pumpkin pie spice
  • ½ tsp salt
  • Butter, maple syrup, and chopped pecans for serving

You’ll also need:

  • 2 medium bowls
  • Whisk
  • Measuring cups and spoons
  • Griddle
  • Spatula
  • Nonstick spray

It’s pancake time!

  • Mix together in a bowl: milk, pumpkin, egg, oil, and vinegar. In a separate bowl, combine all dry ingredients listed from flour through salt. Whisk gently into wet ingredients just until combined.
  • Heat the griddle to medium heat and spray with nonstick spray. Pour pancake batter onto griddle (about a quarter cup per pancake). Cook until brown on both sides, flipping as needed.
  • Serve with butter, pecans, and maple syrup.
