Pumpkin Spice French Toast
Ingredients:
- 6 eggs
- 1 cup milk
- ¼ cup brown sugar
- 2 tsp pumpkin pie spice
- ½ tsp salt
- 1 ½ tsp vanilla
- ½ cup canned pumpkin
- 1 loaf (12-16 slices) of sourdough bread
- Maple syrup, butter, and chopped pecans
You’ll also need:
- Medium bowl
- Whisk
- Measuring cups/spoons
- Griddle
- Spatula
- Nonstick spray
Let’s get going!
- Turn on flat top griddle to medium heat and coat with nonstick spray.
- Whisk together in a bowl until smooth: eggs, milk, brown sugar, pumpkin pie spice, salt, vanilla, and pumpkin.
- Dunk bread into egg mixture quickly to coat on both sides and place on griddle. Cook for 3-4 minutes per side until brown. Remove from heat and top with butter, sprinkle with pecans, and drizzle with maple syrup.
Pro tip: Hate soggy French toast? You’re not alone – but it’s an easy fix! Just don’t use regular sliced bread or even Texas toast. Instead, use sourdough bread because it’s naturally a denser, dryer bread. The egg mixture will moisten it enough to let it get a crispy coating, but won’t make it soggy.
Prefer pancakes to French toast? Here’s an easy variation to try – and it contains a lot of the above ingredients!
