Get Breakfast Started Right With This Easy Camping Recipe

Nothing beats a hearty breakfast - it's the most important meal of the day! But it can be difficult thinking of easy camping recipes that can get the day started on the right foot. Try out this delicious and easy camping recipe for breakfast quiche (pronounced "keesh") and enjoy breakfast time like never before!

Fast & Easy Quiche

For each quiche, you'll need:

  • One frozen 9" pie crust
  • 6 eggs
  • 1/3 cup sour cream
  • 2/3 cup shredded cheese (Use cheeses you like: shredded cheddar, mozzarella, pepper jack, etc.)

Make-ahead assembly:

  • Crack eggs into a medium mixing bowl.
  • Whisk in sour cream and beat it until it's as smooth as possible (there may be a few tiny lumps of sour cream)  
  • Add cheese and other fillings (suggested below), stirring gently to combine.
  • Carefully pour into a gallon-size food storage bag, seal, and place in fridge to chill overnight.
  • In the morning, snip off a tip of the bag and pour the egg mixture into a pie crust. Bake at 350 degrees for 30-40 minutes or until lightly brown on top and knife inserted comes out clean.

Quiche fillings:

One of my family's favorite aspects of quiche is how you can modify it to anyone's palate - even the pickiest of eaters! Here are a few suggestions and combinations to try:

  • Ham & cheese quiche: add 2/3 cup fully cooked diced ham into the egg mixture with the cheese and sour cream.
  • Veggie quiche: dice and saute the following in 2 Tbs of vegetable oil: 1/2 onion, 1 Roma tomato, 3-4 baby bella mushrooms, 1/2 cup finely chopped broccoli, and 3-4 baby sweet bell peppers. When the onions are tender and translucent, add a handful of frozen chopped spinach. Heat through until spinach is soft and wilted. Add to egg mixture with cheese and sour cream.
  • Meat trio: cook and crumble the following: 1/2 cup ground mild Italian sausage, 3-4 slices bacon, 1/2 cup fully cooked diced ham. Add to egg mixture with cheese and sour cream.

If you're not a mega fan of quiche with a crust, use these ideas to dress up plain' ol scrambled eggs! Make the mixtures as recommended, then pour into a hot, oiled skillet on the outdoor cooktop of your new or used RV. Enjoy with a fresh cup of coffee, and get started on your day!
